For lunch I usually eat leftovers.

Dinners this week....
Oven stuffer roaster with mashed potatoes and carrots
Pot roast with carrots, potatoes, and onions
Stuffed peppers
Chicken noodle soup (I made homemade soup from the leftover chicken), salad and rolls
Sitr fry - chicken, onions, carrots, broccoli, bean sprouts, waterchestnuts, and mushrooms with rice

Lunch is always leftovers or a sandwich.

Dinners:

1. Last night was this. We add green or other peppers to it and sometimes serve with rice. Dd and dh have to add cheese to everything as well. Super easy and yummy...but I doubled it last night and think I must have been distracted (I was drinking wine too! LOL) and put an extra heap of the cayenne in as they were HOT..too hot for me. But normally very very tasty and easy to do.

2. Grilled burgers (no bun) with salad

3. Cilantro-lime chicken and rice. Another hot item but it doesnt ahve to be. Hubby was heavy handed with the jalapenos to sweat out my awful sinus cold. Its abit putsy to prep (chopping and lime squeezing, etc). But he does in bowls like a cooking show, then it cooks very quickly. We serve with the 90-second rice in a bag. Leftovers are great. Sorry I can no longer find the recipe online but I made it into a Facebook "note" so I can copy and paste it somehow if anyone wanted the recipe. Tasty!

BTW~ Sunday I made Olive Garden Pasta Fagioli soup in the crokpot. We had that with salad and pillsbury flaky roll thingys. My hubby hates soup, says its a beverage, but he will eat this occasionally as its very hearty and not alot of "juice" to it. Burger, carrots,celery, onion, a few cans of diced tomatoes and a few cans of different kidney beans (red, white and pink I do all 3), and some noodles you toss in at the end. EASY PEASY...

I am not "normally" this meal disciplined but we did good so far this week!!

Lunches for kids:

Hummus and multi-grain pitas sent with apples and watermelons and cheese

Costco pizza

Raviolis

Dinners:

Butter chicken over basmati rice, green salad, watermelon

Turkey Brown Rice and Spinach soup, homemade, broth was made from a whole turkey I roasted last week, with fresh strawberries and greek yogurt (whole milk kind....yum)

Left over Korean BBQ...meaning rice, grilled meats, green lettuce, kimchi and seaweed, with red bean buns = this is our family's absolute favorite meal

Although today, I wasn't very hungry at lunch, so I ate a slice of cheese, more watermelon, and half a butter stollen, which is a German Christmas bread with tons of dried fruits, nuts and rum.

That's our last 3 meals....HTH

Season chicken cutlets with paprika, thyme, garlic powder, salt and pepper. Saute in oil of choice. Remove from pan, lower heat and add a couple tblspns of butter and a table spoon of flour. Wisk into a paste and add a tblspn of dijon mustard and then broth to make a pan gravy. Mustard chicken ~ i think i saw rachael ray do it once. Anyway, it's nice on buttery, light and fluffy egg noodles with a veggie of choice. Roasting veggies with a touch of olive oil and salt in a 425 degree oven is a nice change. PS. You can season the chicken or turkey with anything you like, just so it pairs with the mustard. Change up the ingredient amounts to taste. Good luck.

Last three lunches...

1. Tuna salad on tortilla chips with spinach dip, slice of red pepper cheese, rice, two bites of my toddlers banana

2. Black forest ham sandwich with a little mayo and tomatoes, Cuties, slice of red pepper cheese

Last three suppers...

1. Tacos

2. Stir fry (we make an endless variety of these)

3. Boneless pork loin chops cooked with worcestershire, soy sauce, apples, vinegar, garlic....and baked beans and mashed potatoes.

Now I'm hungry. :)

Dinners

1- Shredded Beef for tacos ( 1 1/2 lbs stew beef, 1 can diced tomatoes or salsa, 1 tbs soy sauce, 1 tbs brown sugar, 2 tbs garlic, 1 tbs lime juice, 1/4 cup chopped cilantro) in slow cooker on high for 5-6 hrs or low for 8

2- Pork and Fruit Stir fry - brown pork in 1 tsp oil, add green pepper, can of fruit (pineapple or mandarin oranges) 1/2 cup water, 1/4 cup vinegar, 2 tbs honey or molasse and let simmer. Thicken by adding 1 tbs cornstarch mixed w/ 1 tbs water. serve w/ brown rice

3- Chicken Nuggets - cut up chicken breast and dip in egg then panko with seasoning (garlic powder, pepper, onion salt) and bake for 20 min. @ 400. Serve w/ vegetable and potato fries (cut up potato into wedges and coat w/ a little oil, bake at 400 until done) Optional - brine chicken to tenderize it/add flavor (let sit in 2 cups water, 1 tbs salt, 2 tbs worcestershire sauce for 30 min. in fridge)

Lunch:
- chili dogs
- chinese take out
- picnic: pepperoni tortilla cream cheese veggie rolls, fruit, crackers

Dinner:
- sausage rice and beans (sautee Eckerich sausage, onion, jalepeno. Add two cans black beans. Pour meat/beans on top of white or brown rice.
- blackened fish tacos. (sautee white fish in butter with plenty of black pepper, chili powder, garlic powder, salt. Serve with a very limey tartar sauce, shredded lettuce, cheese, salsa on tortillas).
- tonight: baked chicken marinated in greek yogurt, worcheshire sauce, herbs, salt. Side of green beans. Maybe some noodles too?

Oh the rut! I know it well!
Dinners:
~ chicken stir fry..I used broccoli, carrots, scallions, and linguine

~ chicken tacos...You just cook the chicken in a dutch oven or crock pot so it's tender....add a jar of salsa(organic of course ;-), and some corn & just mix that together. Oh and avocado is yummy on top ;-) and the stand and stuff shells work best

~ Spaghetti...I started using ground turkey instead of beef and we like it better. I like to use zucchini & mushrooms with a vegetable spaghetti sauce

I started making a list of every dinner that I make so when it comes time for the grocery list I can just choose from there :-) it's way easier for me since I can remember.... nothing!

When it gets warmer we always make these turkey burgers..YUM! And it's crazy we don't miss beef at all.

Omg I have to stop adding to this! But I make these hot dogs that are tasty. Just make SURE you buy organic or check the ingredients list to make sure there are no nitrates or nitrites. (sorry..I've become a bit of a nut about nutrition) not sure what happened to me. ANYWAY...

I put some canola oil or you can use butter in a skillet with the hot dogs

add chopped red onion and jalapeno juice & the peppers. Just let them cook for a little bit and that's it

Last night we had "big salad night" which the kids love. I buy a bag of chicken tenders & while they're baking I chop: 2 heads romaine, 1 can black olives, 1 jar green olives, 1/2 cucumber, 2 tomatoes, open, drain & rinse a can of chick peas, & cut up a ball of fresh mozzerella. Everyone makes their own plate.

The night before we made cheesesteaks with curly fries & ceasar salads.

The night before that I broke down & bought that 'big box' from Pizza Hut with 2 pizzas, cheesy breadsticks & chicken wings for $20.

The night before that we had fish tacos with yellow rice & refried beans.

The night before that was breakfast for dinner with sourdough french toast utilizing the eggnog we still had in the fridge & a sausage, cheese & grits casserole.

Lunches I generally buy out during the week. Yesterday we had Subway, Wednesday we had Wendy's & Tuesday we had Chipotle.

we've been making subs and i love cheese ravioli (comes in a bag in the frozen section) with my favorite spagetti sauce (ragu sauted onions and mushrooms). both are pretty easy. we put red wine vinegret on the sub bread then add the meat we like, cheese black olives lettuce and tomatoe then put the oven on broil high and stick it in there for about a minute...make sure you watch it and put something like meat on both halves of the sub so the bread doesnt burn. add the lettuce after it's done cooking. yum! what about tuna sandwiches, salad, spaggetti, shepards pie.

Dinners:

Tuna casserole, with lots of celery, sherry, shallots, parmesan, mushrooms, thinly sliced carrots and peas, topped with cheddar and swiss, arugula salad

Turkey burger tacos with fresh jalapenos. My son likes it spicy. Cheese, scallions, red peppers, lettuce, and pinto beans for toppings. I made mine a Taco salad.

Vodka Sauce spagetti with peas (again!), hot turkey sausage and whole grain pasta.

I usually love to cook but with my husband gone on a military assignment and my 3 kids being so little, it seems pointless.
There is no reason for you to be in a food rut with so many amazing dishes out there in the world. Go to the library, pick up a cookbook with feasible recipes for a family, and make three of them within the next two weeks.
